Ingredients
| 4 Good Nature Pork boneless center | 1 small yellow onion | |
| cut pork chops, cut 3/8-inch thick | 5 cloves garlic | |
| 1 ounce ginger | 1 rib lemon grass | |
| 1 sprig mint | 1 sprig basil | |
| 1/2 cup sherry vinegar | 1/2 cup rice vinegar | |
| 2 tablespoons Dijon mustard | 1 cup orange juice | |
| 1 cup hoisin | 2 tablespoons green peppercorns | |
| 3 star anise |
Instructions for Sauce
- Using a medium sauce pan, sauté the onion, garlic, ginger, lemon grass, mint and basil until lightly golden brown.
- Add both vinegars and mustard.
- Reduce to almost dry.
- Add juice, hoisin, peppercorns and star anise.
- Simmer to about 1/2 volume.
Instructions for Pork
- Place pork in shallow baking pan or plastic container. Pour sauce mixture over chops; cover and refrigerate for 30 minutes or more.
- Heat 12-inch nonstick skillet or pan over medium-high heat. Drain liquid from pork and save. Place pork in skillet or pan and brown for a few minutes on both sides.
- Pour sauce over the top of the chops. Cover pan. Simmer over low-medium heat for 7 minutes.
