Hoison BBQ Pork Chops


Ingredients
4 Good Nature Pork boneless center1 small yellow onion
   cut pork chops, cut 3/8-inch thick5 cloves garlic
1 ounce ginger1 rib lemon grass
1 sprig mint1 sprig basil
1/2 cup sherry vinegar1/2 cup rice vinegar
2 tablespoons Dijon mustard1 cup orange juice
1 cup hoisin2 tablespoons green peppercorns
3 star anise 


Instructions for Sauce
  1. Using a medium sauce pan, sauté the onion, garlic, ginger, lemon grass, mint and basil until lightly golden brown.
  2. Add both vinegars and mustard.
  3. Reduce to almost dry.
  4. Add juice, hoisin, peppercorns and star anise.
  5. Simmer to about 1/2 volume.

Instructions for Pork
  1. Place pork in shallow baking pan or plastic container. Pour sauce mixture over chops; cover and refrigerate for 30 minutes or more.
  2. Heat 12-inch nonstick skillet or pan over medium-high heat. Drain liquid from pork and save. Place pork in skillet or pan and brown for a few minutes on both sides.
  3. Pour sauce over the top of the chops. Cover pan. Simmer over low-medium heat for 7 minutes.
