Cinnamon Apple Pork Roast


Ingredients
1 (2-pound) Good Nature Pork1 tablespoon vegetable oil
   boneless pork loin roast1 teaspoon black pepper
2 apples, cored, peeled and1 teaspoon ground ginger
   sliced into wedges1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon1/2 cup apple juice
1/4 cup honey1 tablespoon lemon juice


Instructions
  1. Brush pork loin with oil.
  2. Combine all the pepper and 1/2 of the ginger, nutmeg and cinnamon. Rub mixture over surface of roast.
  3. In small saucepan, combine the other half of the spices with the apple juice, honey, lemon juice and apple wedges.
  4. Roast pork loin in shallow pan at 350° F, for 45 minutes to 1 hour until internal temperature reaches 155° F.
  5. Remove from oven; let roast stand for 10 minutes.
  6. Cook apple mixture over medium heat until apples are tender.
