Adobo-Marinated Pork Tenderloin


Ingredients
2 pounds Good Nature pork tenderloin, trimmed3 sprigs parsley
1/2 cup white wine vinegar1 teaspoon dried chili flakes
1/2 cup dried oregano leaves1 cup olive oil
6 garlic cloves, peeled1/2 teaspoon black pepper


Instructions
  1. In food processor, place garlic, parsley, oregano and dried chili flakes. Process till paste-like consistency is reached.
  2. Slowly add vinegar and oil. Add salt and pepper to taste.
  3. Place pork tenderloins in a casserole dish.
  4. Pour sauce over top and marinate 6 to 8 hours prior to cooking.
  5. Heat oven to 375° F.
  6. Remove tenderloins from casserole dish and place on roasting rack. Cook 20 minutes or until internal temperature reaches 160° F.
