Adobo-Marinated Pork Tenderloin

Ingredients
| 2 pounds Good Nature pork tenderloin, trimmed | 3 sprigs parsley | |
| 1/2 cup white wine vinegar | 1 teaspoon dried chili flakes | |
| 1/2 cup dried oregano leaves | 1 cup olive oil | |
| 6 garlic cloves, peeled | 1/2 teaspoon black pepper |
Instructions
- In food processor, place garlic, parsley, oregano and dried chili flakes. Process till paste-like consistency is reached.
- Slowly add vinegar and oil. Add salt and pepper to taste.
- Place pork tenderloins in a casserole dish.
- Pour sauce over top and marinate 6 to 8 hours prior to cooking.
- Heat oven to 375° F.
- Remove tenderloins from casserole dish and place on roasting rack. Cook 20 minutes or until internal temperature reaches 160° F.
